Today agricultural development has different meaning. Long ago, the application of advanced machinery means development, but the changes made in different varieties of agricultural products all over the world and the help of human health have made significant changes.
The tomato is one of the most cultivated vegetable in the world. The average annual consumption of tomato fruit is 18 kg per capita in Europe and 8 kg in the US. Commonly consumed tomato is best known for their rich content of lycopene and carotenoid known for many beneficial health effects. Pigments such as anticyclonic do not normally exist in tomato fruit, but a newly developed non genetically modified black tomato was investigated for its phytochemical composition and antioxidant activities. Black tomato is the result of breeding program and it is not a genetically modified (GM) product. We report the chemical characterization and structure elucidation of the agriculture anthocyanin found in the black tomato as well as other bioactive compounds ( carotenoids , polyphenols and vitamin C) of the whole fruit. The tomato as a fresh or processed food, processes a high nutritional values, due to its rich and diverse micronutrient. Therefore it is not surprising that in the last 20 years there has been an increasing interest in developing highly consumed food, such as tomato, rich in flavonoids and particularly anthocyanin.
Several epidemiological studies indicate a beneficial effect of tomato consumption in the prevention of some major chronic disease such as some type of cancer and cardiovascular diseases.
Some varieties include Black Krim, Paul Robeson, Cherokee Purple, Black Sea Man, Purple Russian and Pruden’s Purple that one of the most popular black tomato variety is the Black Krim tomato.
The black tomato fruit has striking blue-black skin and very meaty, deep fresh The black tomato has strong, robust flavor and sweet taste among the best tasting of all tomatoes.
